Pumpkin Spiced Cornbread Holiday Recipe from Raw Spice Bar

This month RawSpiceBar sent me a curated spice kit featuring exotic flavors like Unpumpkin Pie Spice made of Ginger, Allspice, Cinnamon, Nutmeg, Black Peppercorns, Star Anise, Spices.

If you’re the adventurous type in the kitchen then you'll appreciate RawSpiceBar. RawSpiceBar is an inexpensive way to get creative in the kitchen without forking over your whole paycheck. Each month they send you a kit of fresh spices paired with global recipes! Oh, did I mention that they are curated by chefs specifically selected from cultures that inspired the spice blends?

This month RawSpiceBar sent me a curated spice kit featuring exotic flavors like Unpumpkin Pie Spice made of Ginger, Allspice, Cinnamon, Nutmeg, Black Peppercorns, Star Anise, Spices.

2 recipes were included as guides for how to use this spice kit, Pumpkin Spiced Cornbread, and Baked Pumpkin Donuts. I opted to make the Pumpkin Spiced Cornbread because it seems a lot more manageable since I don’t have a doughnut pan (I've always been intimidated by making donuts)!

The ingredients for the Pumpkin Spiced Cornbread  calls for:

- RawSpiceBar’s Unpumpkin Pie Spice (no added salt, pepper, MSG, flour, rice, or sugar as filler.)
- 2 Cups Cornmeal Mix - http://amzn.to/2i6c3wy
- 2 tbs Sugar - http://amzn.to/2iCK7xo
- 1 1/2 pounds Sweet Potatoes, Cooked & mashed - http://amzn.to/2iCVHs1
- 1 tsp Baking Soda - http://amzn.to/2icItTZ
- 2 Cups Plain, nonfat yogurt - http://amzn.to/2iCL48D
- 1oz Butter - http://amzn.to/2iCLbB5
- Salt, to taste

I was honestly a little confused with the sweet potatoes but followed the directions as given with one caveat that I didn’t use a cast-iron skillet. In its place, I opted for a traditional baking pan. Everything mixed well but during the baking process, I found that the cornbread needed extra time in the oven. So I kept in there for another 30 minutes with my total baking time coming in around 65 minutes. This could have been due to the replacement of the cast-iron skillet with a baking pan.

The end result came out great! This was a timely treat during the holiday season. We’ve enjoyed this recipe paired with eggs over easy and a few slices of avocado making it a light, healthy breakfast yet festive enough for the holiday season.

Overall I think RawSpiceBar is a super affordable investment for families that like to switch it up in the kitchen. If you’re worried that 3 spice kits won’t get you through the month, RawSpiceBar also offers individual spice kits on the site, allowing you to select your favorites every time. The also keep a selection of recipes available to you on their site for free so if you loose you from a previous kit, it will always be there for you at RawSpiceBar.com

I’m looking forward to trying some of the other recipes and kits that RawSpiceBar sent me! I’ll post updates if I come across something spectacular!

xxx for now!
