CRISPY FROG LEGS

Preux & Proper, is one of the new cajun/creole american restaurant opened recently in DTLA. The name fits the location perfectly. Located at the intersection of Spring & Main, Preux & Proper presents a two-story bar and dining experience with a beautiful view over the  intersection of Spring & Main..

“Preux", a French word defining a “gallant” suitor positioned on the first floor of the restaurant, hosts a daiquiri bar and “Proper" meaning “genuine” is on the second floor where the host and seating for the restaurant are located. 


Preux & Proper offers a series of small plates and although the menu may change as the restaurant refines itself in the Downtown LA food market, their selection is a great start. Here is my review of a selection of the small plates:
KALE & QUINOA

MUFFALETTA BOARD
cured meats, cheese, olives, fig jam, grilled bread
For many French restaurants a cheese and meat plate is a staple. Preux & Proper version is focused around muffaletta bread, a traditional new orleans bread used to make sandwiches. 

CRAB CAKE
crispy hominy, blackened corn, miso
Adding hominy to the crab cake was a unique combination that added a crunchiness to the crab cake that I wasn’t expecting. 

CRISPY FROG LEGS
chilies, sauce picante, coriander seeds
The frog legs were my absolutely favorite! Their was just enough spice and they were tender enough for the meat to just fall off of the bone. 

WOOD ROASTED CHICKEN
gumbo fried rice, sautéed greens, hot sauce
In this particular visit,the chicken was a bit dry but the gumbo fried rice added flavor and moisture that wouldn’t have been represent otherwise. There could have been more of a bed of rice and I thought the greens were a little soggy.  

KALE & QUINOA
shaved parmesan, almonds, sherry

This was another one of my favorites! I would have been a very satisfied and happy woman with the crispy frog legs and the kale & quinoa.
MUFFALETTA BOARD
The staff at Preux & Proper provided great customer service which of course made our dining experience so much better. The wait staff asked for feedback for every dish. Upon our concern over the roasted chicken, the chef comped our deserts, the Banana Bread Pudding and the Flourless Chocolate Cake. Both were fantastic, however I highly recommend the Flourless Chocolate Cake.
